It is a food model that aims to address the health and environmental concerns associated with food production and consumption. For this, in addition to guaranteeing the health of people, seeks to promote responsible production and consumption, generates a reduced environmental impact, fights against climate change, respects culture, biodiversity and protects terrestrial ecosystems and underwater life. This type of food, aligned with the Objectives of Sustainable Development (SDG), is responsible, sustainable and ethical, both locally and globally with the environment and with the rest of the living beings of the planet. This Food, will also look for the environmental footprint, that is, the emission of gases, energy consumption and the use of water resources as well as land during the whole process of the food chain. In addition to prioritizing little processed, local and seasonal foods and promoting culinary and gastronomic activities.
Therefore, and being a Mediterranean country, the main diet that we will have in this field of volunteering will be a Mediterranean diet, this being a model of food that is considered balanced and healthy. The characteristics that support its benefits and recognition are: sober, varied, attractive, permissive, effective, cheap, accessible, versatile, pleasant and able to provide the optimal nutritional contribution.
The main characteristics of the mediterranean diet pattern that we are going to take during these days, will be the following:
Abundant consumption of plant foods (whole grains, fruits, vegetables, legumes, nuts, seeds and olives)
Olive oil as the main source of fat
Moderate to high consumption of fish.
Moderate consumption of eggs and poultry meat.
Moderate consumption of dairy (in the form of cheese and yogurt).
Regular use of various herbs and spices, such as, lemon, vinegar, garlic, rosemary, parsley, etc.
Low consumption of red meat (mainly sheep and goats), cakes and saturated fat.
Consumption of fresh, minimally processed, local and seasonal foods.
Needless to say, being an international volunteer camp, there are many origins that can come to us, and with it, many types of people with
different religions, customs, allergies, etc. Prior to the start of the field, we will contact them, through email, asking them if there is any type of allergy, special meal regime, etc., to be able to foresee the menus so that the best services can be provided.
This service will be provided by professionals commissioned annually in the Facilities of the SIMEÓN OLIVER School Residence to make all kinds of meals in the school period.
